Founded by veteran butcher Leo Savedra and renowned chef Gabriel Amador, S-A BBQ was born in Albuquerque with a single mission: to respect the traditions of “low & slow” smoking while unapologetically infusing the bold, sun-drenched flavors of New Mexico.
Our Philosophy: No Shortcuts. New Mexican Style. No Apologies. We don’t just cook meat; we craft flavor. From our signature hand-rubbed brisket to our house-made Hatch green chile links, every bite is a result of patience driven, wood fired mastery. By using local Estancia beans, premium cuts, and our own “Zia Gold” and “Burqueño BBQ” sauces, we ensure that when you eat at S-A, you’re tasting the High Desert.
